Forest Honey

This honey is is usually produced by bees/aphid that collects nectar from trees, both conifers and deciduous and not from blossoms. It is also referred to as Honeydew.

  • It is rich in minerals, amino acids and oligosaccharides (high molecular weight sugars)
  • It resists crystallization comparatively because of high fructose and low glucose levels, as well as a low glucose to water ratio
  • It also has higher than average antibiotic properties due to higher levels of Glucose Oxidase which leads to the production of Hydrogen Peroxide
